Berry and Coconut Granola

Preparation time 5 minutes. Cooking time 20-25 minutes

Ingredients

Makes 12-14 1/3 cup servings

  • 4tbsp honey
  • 2 ½ tbsp coconut oil
  • 1 ½  tsp ground cinnamon
  • 4 cups jumbo/whole grain rolled oats
  • ¾ cup coconut thread
  • 1 cup dried fruit (cranberries, blueberries, raisins)

Method

  1. Pre-heat oven to 150°C and line a large oven tray with baking paper
  2. Melt honey, coconut oil and cinnamon in a large saucepan
  3. Stir in the oats, ensuring they are well coated
  4. Spread oats evenly onto prepared tray and bake for 15-20 minutes, stirring half way through
  5. Add coconut and dried fruit and bake for a further 4-5 minutes until coconut is slightly toasted
  6. Store in an air-tight container once completely cooled.
  7. Serve with milk or yogurt and fresh fruit.
