Berry and Coconut Granola
Preparation time 5 minutes. Cooking time 20-25 minutes
Ingredients
Makes 12-14 1/3 cup servings
- 4tbsp honey
- 2 ½ tbsp coconut oil
- 1 ½ tsp ground cinnamon
- 4 cups jumbo/whole grain rolled oats
- ¾ cup coconut thread
- 1 cup dried fruit (cranberries, blueberries, raisins)
Method
- Pre-heat oven to 150°C and line a large oven tray with baking paper
- Melt honey, coconut oil and cinnamon in a large saucepan
- Stir in the oats, ensuring they are well coated
- Spread oats evenly onto prepared tray and bake for 15-20 minutes, stirring half way through
- Add coconut and dried fruit and bake for a further 4-5 minutes until coconut is slightly toasted
- Store in an air-tight container once completely cooled.
- Serve with milk or yogurt and fresh fruit.
