Cauliflower ‘Rice’ with Turmeric

This is quick and easy to make and is a great alternative to rice

Ingredients

(serves 4)

  • 1 small cauliflower – approximately 500g
  • 1/2 tsp turmeric
  • pinch of salt
  • 1 tbsp olive oil

Method

  1. Chop the florets off the cauliflower and cut the stalk into fairly small pieces then put it all into a food processor with the turmeric and salt
  2. Blitz until it is rice sized or smaller
  3. Heat the oil in a non-stick frying pan then add the cauliflower and cook, stirring, for approximately 5 minutes until the colour develops
  4. Serve immediately.
