Crunchy Lemon Slice

This is my favourite recipe in this section – to me it is the perfect combination of tangy, sweet, salty, crunchy gooey deliciousness! I hope you enjoy it as much as I do!

Preparation time 25 minutes. Baking time 40 minutes. Cooling time minimum of 1 hour

Ingredients

(Makes 16 squares)

  • 1 ¼ cups plain flour
  • ½ tsp bicarbonate of soda
  • 1 ¼ cups rolled oats
  • ½ tsp salt
  • ¼ cup raw sugar
  • ½ cup soft brown sugar
  • 1 tsp vanilla extract
  • ¾ cup/175g melted butter
  • 1 tin sweetened condensed milk
  • Juice (approx. 1/3 cup) and finely grated rind (approx. 1 tbsp) of 2 lemons
  • 2 large egg yolks

Method

  1. Preheat conventional oven to 170°C and line a 20cm square slice tin
  2. Sift the flour and bicarbonate of soda into a large mixing bowl then add the oats, salt and sugars and mix well
  3. Stir vanilla into the melted butter then pour over the dry ingredients and stir until well combined
  4. Press half of the mixture into the bottom of the prepared tin and bake in the pre-heated oven for 15 minutes
  5. While this is baking, grate and squeeze the lemons then whisk together the condensed milk, lemon juice and rind and the egg yolks until well blended
  6. Remove the base from the oven after it has baked for 15 minutes and pour the lemon mixture over it and spread into an even layer. Sprinkle the remaining crumble mixture on top of the lemon layer and bake in the oven for around 20 minutes or until lightly golden
  7. Remove from the oven and allow to cool. Refrigerate for at least one hour before cutting into squares.

Store in an airtight container in the fridge
