Crunchy Maple and Walnut Granola

Preparation time 10 minutes, cooking time 20-25 minutes


Makes 20 servings of 45g/ 1/3 cup

  • 3 cups wholegrain rolled oats
  • 1 cup walnut halves
  • 1/2 cup almonds (cut in half)
  • 1/2 cup shredded coconut
  • 1/3 – 1/2 cup pure maple syrup
  • 1/2 cup melted coconut oil
  • 2 tbsp almond butter
  • 2 tsp vanilla extract


  1. preheat conventional oven to 160°C and line a large baking tray with baking paper
  2. Place all of the ingredients in a food processor and pulse until well combined and forming chunks
  3. Spread onto the prepared baking tray and bake in the centre of the oven for 20-25 minutes, stirring occasionally to prevent the edges and/or top from burning
  4. Remove from the oven and leave to cool and serve with milk or yogurt and fruit.

Once cooled completely you can store the remaining granola in an airtight container in a cool, dry place.
