Crunchy Maple and Walnut Granola
Preparation time 10 minutes, cooking time 20-25 minutes
Ingredients
Makes 20 servings of 45g/ 1/3 cup
- 3 cups wholegrain rolled oats
- 1 cup walnut halves
- 1/2 cup almonds (cut in half)
- 1/2 cup shredded coconut
- 1/3 – 1/2 cup pure maple syrup
- 1/2 cup melted coconut oil
- 2 tbsp almond butter
- 2 tsp vanilla extract
Method
- preheat conventional oven to 160°C and line a large baking tray with baking paper
- Place all of the ingredients in a food processor and pulse until well combined and forming chunks
- Spread onto the prepared baking tray and bake in the centre of the oven for 20-25 minutes, stirring occasionally to prevent the edges and/or top from burning
- Remove from the oven and leave to cool and serve with milk or yogurt and fruit.
Once cooled completely you can store the remaining granola in an airtight container in a cool, dry place.
