Feta, Tomato and Basil on Toast


The first time I ate a similar version of this was in Italy. Here is my version. Enjoy!

(In Italy it was made with ricotta. You could also use ricotta for this recipe instead of feta).

Preparation time 10 minutes. Cooking time 5 minutes



Serves 1

  • 2 slices of rye bread, toasted
  • 40g Feta thinly sliced
  • 1 tbsp fresh basil leaves
  • 6 cherry tomatoes, each sliced into 3
  • Freshly ground black pepper


  1. While the bread is toasting, switch grill to medium high and slice the cheese and tomato
  2. Once the bread is toasted top with feta, then basil, then tomato slices
  3. Place under the grill until tomatoes are softened, approximately 5 minutes
  4. Top with freshly ground black pepper and enjoy

I almost forgot to take a photo of this - I was hungry so just ate it and only remembered to take a photo when there was half a slice left! Oops!
