Gooey Chocolate Brownies

Preparation time 15 minutes. Cooking time 15-20 minutes


Makes 16 slices

  • 100g butter
  • 1 cup caster sugar
  • 2 free-range eggs
  • 1 tsp vanilla extract
  • ¾ cup plain flour
  • 1 tsp baking powder
  • ½ cup cocoa
  • 100g white chocolate, cut into chunks
  • 100g dark chocolate, cut into chunks


  1. Preheat conventional oven to 180°C and line a 20cm square slice tin
  2. Melt the butter then whisk in the sugar
  3. Whisk in the eggs and vanilla extract
  4. Sift the flour, baking powder and cocoa into the mixture and add the chocolate chunks then gently fold until just combined – don’t over mix
  5. Pour the mixture into your prepared tin and bake in the centre of the pre-heated oven for 15 to 20 minutes until a skewer still has a little mixture sticking to it when inserted into the centre. Leave to cool in the tin before slicing.
