Weeknight dinners

It is important to me that I eat great tasting healthy meals 7 days a week; but I also do not want to spend all of every evening in the kitchen, especially after a long day at work. Every recipe in this section will take you less than 1 hour to prepare and many of them will take less than half an hour.

A lot of these meals are still good when frozen and reheated so a tip from me to you is to cook more than you need for that evening and freeze some extra portions. This means that on the nights when you are particularly tired, or when you need to eat quickly because you are going out again, you just need to reheat a meal that you have already prepared.*
