Caribbean Cabbage

Preparation time 15 minutes. Cooking time 11-14 minutes

Ingredients

(Serves 6)

  • 1 tbsp cooking oil of your choice
  • 1 onion, diced
  • 3 cloves of garlic, crushed
  • 4 sprigs of thyme
  • 1 medium cabbage, diced
  • 1 carrot peeled then sliced into thin strips approximately 4cm long
  • 1/2 red pepper, diced
  • 1/2 yellow pepper, diced
  • 1/4-1/2 scotch bonnet pepper, diced or 1-2 tsp dried chilli flakes
  • 1 tsp Jamaican curry powder (can substitute for mild curry powder if you don’t have Jamaican)
  • Salt to taste
  • Freshly ground black pepper to taste

Method

  1. Heat the oil in a large saucepan over a medium heat then add the onion, garlic and thyme and cook for 5 minutes, stirring frequently
  2. Add the cabbage, carrot, red and yellow peppers, scotch bonnet or chilli flakes, curry powder and salt and stir to mix well
  3. Reduce the heat to low, place a lid on the saucepan and leave to cook for 5-8 minutes, stirring occasionally
  4. Stir in the black pepper and serve immediately.
