Caribbean Cabbage
Preparation time 15 minutes. Cooking time 11-14 minutes
Ingredients
(Serves 6)
- 1 tbsp cooking oil of your choice
- 1 onion, diced
- 3 cloves of garlic, crushed
- 4 sprigs of thyme
- 1 medium cabbage, diced
- 1 carrot peeled then sliced into thin strips approximately 4cm long
- 1/2 red pepper, diced
- 1/2 yellow pepper, diced
- 1/4-1/2 scotch bonnet pepper, diced or 1-2 tsp dried chilli flakes
- 1 tsp Jamaican curry powder (can substitute for mild curry powder if you don’t have Jamaican)
- Salt to taste
- Freshly ground black pepper to taste
Method
- Heat the oil in a large saucepan over a medium heat then add the onion, garlic and thyme and cook for 5 minutes, stirring frequently
- Add the cabbage, carrot, red and yellow peppers, scotch bonnet or chilli flakes, curry powder and salt and stir to mix well
- Reduce the heat to low, place a lid on the saucepan and leave to cook for 5-8 minutes, stirring occasionally
- Stir in the black pepper and serve immediately.
